I would contact In-Situ, Solinst, Instrumentation Northwest, or another
manufacturer (easy to find via Google) and inquire about their used
datalogging pressure transducers. They sometimes have rental equipment
they sell for a significant discount if you ask. If you mention you are
an academic researcher, you may get a further discount. A few hundred
bucks might get you what you need, and if you're careful with it, you
could sell the instrument after your research is finished, and recoup at
least some of your investment.
Or, you could rent one if you only need a couple of weeks of data.
You can set the sample rate on some models for less than one second, if
that level of data density is useful to you. However, I don't know of
any that provide truly continuous (analog) data. All you need to run
them and upload data is a standard PC with some free software supplied
with the instrument.
